Banana blueberry bread | Easy and healthy recipe!
Hello you! Today a post on Friday because yesterday I was super busy focussing op my last exam, so excusez moi for that.. Today I made a super delicious banana bread that I HAVE to share with you since it’s so quick and easy to make. This recipe is besides easy and quick, also really healthy and easy to take with you on to go (perfect for people who like to snack like me hihi).
What do I need:
- 2 bananas
- Frozen blueberries
- 2 eggs
- 1 table spoon Cinnamon
- 1 table spoon vanilla extract
- Whole wheat flower
- 2 table spoons Raisins
- 2 teaspoons Baking powder
- 2 table spoons Raw honey (or normal honey if you don’t have raw honey)
- Cake baking tray
- One scoop whey protein powder vanilla (optional, but extra protein for the muscles)
How to make it:
First you have to pre-heat your oven on 180 degrees celsius for about 10 minutes. The next thing you have to do, is to mash op the two bananas into a big bowl. Next you’re going to add all the fluids: 2 eggs, a table spoon vanilla extract, 2 table spoons of honey and some yoghurt. I don’t know exactly how much yoghurt I use, but I guess I use about 100 ml. Now you’re going to add 2 teaspoons of baking powder, a table spoon of cinnamon and some whole wheat flower. I add the amount of flower the mixture needs until it has the consistency of cake batter. So try to not make it too dry and also not too liquid! The last step in making the banana bread is to put in 4 tablespoons of the frozen blueberries and 2 tablespoons of raisins. Oh and also feel free to add some vanilla protein powder if you like and if you have it in your cupboard of course. Stir the blueberries and the raisins gently through the batter and you’re ready to put the mixture into your cake baking tray.
You now simply put it into the oven and wait for about 30 minutes! After waiting for half an hour, your cake is now ready to be enjoyed! It’s super easy to take some slices of this cake with you on the go, so super easy to enjoy it during work or school!
Hoped you liked it! Let me know.
Much love, R.
